But when my personal stash runs low, these Healthy Ferrero Rochers come to the rescue, offering a vegan, gluten-free, and dairy-free alternative.

Just like my recipe for Lemon Chocolate Cheesecake Slice, these Vegan Ferrero Rochers are perfectly portioned to produce a small batch. Whether you’re craving a small snack or looking to satisfy your sweet tooth after a meal, you’ll have 8 balls of bliss to enjoy between you a loved one.
Healthy Ferrero Rochers: Vegan + Small Batch
Servings: 8 balls | Prep: 15 mins | Set Time: 10 mins
Ingredients
10 squares of Loving Earth Hazelnut Chocolate, melted
3 tbsp hazelnut butter
1 tbsp rice malt syrup or maple syrup
1 tbsp raw cacao powder
8 whole raw hazelnuts
1/8 cup raw hazelnuts, crushed
Method
Start by melting 5 squares of Loving Earth Hazelnut Chocolate in a microwave or using a double boiler.
In a small bowl, combine the melted chocolate, hazelnut butter, rice malt syrup, and raw cacao powder. Mix until well combined to create the soft chocolate hazelnut centre.
Take a teaspoon of the mixture and place a whole hazelnut in the centre. Roll the mixture into a ball ensuring the hazelnut is fully covered. Repeat another 7 times, or until all the mixture has been used.
Next, melt the remaining 5 squares of chocolate. Coat each ball in the melted chocolate, ensuring they are evenly coated. Then roll each ball in the crushed hazelnuts until fully coated.
Place the coated balls on a baking sheet lined with parchment paper and transfer to the fridge for 10 mins to firm up.
